Avocado Cream Crab Salad- My Recipe
I eat green salads every day and sometimes I get tired of eating the same greens. Therefore, I made this salad recipe with just a small amount of greens and many great flavors. I usually prepare this dish on saturdays while I have an amazing dinner with my boyfriend. It is like my reward for eating well during the week so I treat myself with this delicious dish.
Avocado Cream Crab Salad by Andrea Saldana
Ingredients: yield 2 small servings or 1 larger serving
- 1/4 tsp/ kosher salt or (your salt of preference)
- 1/4 tsp/ black pepper
- 1 tbs/ chopped spanish onions
- 1 tbs/ chopped cherry tomatoes
- 1 1/2 tbs/ chopped celery
- 1 tsp/ light mayo
- 1tsp / heavy whipping cream
- 1/4 tsp/ 100% olive oil
- 1/2 lime
- 1/2 avocado (perfect green and creamy)
- 1/2 tps/ chopped basil
- 2 red grapes cut in half
- 1 strawberry cut in 4 pieces
- 1/2 tbs of chopped mango
- light corn syrup
- 4 imitation crab meat-leg style CRAB STICKS (fully cooked-ready to eat)
- spinach (your preference) optional
Directions:
Keep your working are clean and wash your hands.

- In a medium bowl combine the chopped ingredients (onions, tomatoes, celery, basil) and mix them very well.
- Add (olive oil, light mayo, heavy whipping cream, lime) and put apart.
-WASH YOUR HANDS- - Smash the avocado then add salt and pepper ( and tast the guacamole)
-WASH YOUR HANDS- - Get your 4 crab stick and make them thinner and put them in a big bowl
-WASH YOUR HANDS- - Put all the chopped ingredients from the medium bowl on the biger bowl
(with the crab) - Then wash your spinach and place it on your plate (Remember presentation is important.)
- Place the guacamole over the spinachs
- Place the crab and ingredients from the now big bowl over the guacamole
-WASH YOUR HANDS- - In a smal bowl mix the fruits (strawberry,mango,grapes) and add the light corn syrup
- Squeeze the lime over and combine.
- Place the fruit mix over the Crab combination.
And ENJOY!Tip- This recipe tastes awesome with wonton crisps or tostadasHope you like it.
